Mexico’s coastal capital is gaining recognition for a culinary scene rooted in local seafood, regional ingredients and a new generation of chefs

A Taste of Baja California Sur

DŪM in Todos Santos is among the restaurants featured in the MICHELIN Guide’s selection for Baja California Sur, showcasing a contemporary approach to Mexican cuisine rooted in the region

La Paz, Baja California Sur, Mexico, Aug. 28, 2026 (GLOBE NEWSWIRE) — La Paz, Baja California Sur, is gaining visibility on Mexico’s culinary map, with restaurants in the destination and surrounding territories featured in the MICHELIN Guide’s selection for Baja California Sur. The recognition adds a new dimension to a destination already known for its natural landscapes, marine experiences and outdoor adventures, while highlighting a culinary scene shaped by regional ingredients, fresh seafood and contemporary approaches to Mexican cuisine.

The MICHELIN Guide currently lists five restaurants under its “Todos Santos, La Paz, Mexico and surroundings” selection: DŪM, Oystera, Benno, TENOCH by Paradero Todos Santos and Cocina de Campo by Agricole in El Pescadero. The broader Baja California Sur selection also includes NEMI in La Paz city, alongside restaurants in other destinations throughout the state.

The culinary scene reflects the character of the region, where fresh seafood, seasonal produce and local ingredients meet contemporary interpretations and distinctive dining concepts.

From the Ocean to the Table
The relationship between La Paz and its coastal environment naturally extends to its culinary identity. Fresh fish and seafood are central to the region’s food culture, while ingredients from Baja California Sur contribute to menus that reflect a strong sense of place.

The MICHELIN Guide’s selection offers travelers another perspective on the culinary landscape of the La Paz area. The restaurants represent a range of approaches, from contemporary Mexican cuisine and seafood to dining experiences centered on seasonal and locally sourced ingredients.

In Todos Santos, TENOCH by Paradero Todos Santos brings together Mexican cuisine and ingredients connected to its surrounding landscape. DŪM offers a creative interpretation of Mexican cuisine, while Benno presents a contemporary approach to the region’s culinary identity. Oystera focuses on seafood, and Cocina de Campo by Agricole, located in El Pescadero, adds another farm-connected culinary experience to the selection.

In La Paz city, NEMI is also included in the MICHELIN Guide’s broader Baja California Sur restaurant selection, further connecting the capital itself to the state’s evolving culinary scene.

A Culinary Scene with a Sense of Place
The MICHELIN Guide recognition forms part of a broader evolution in Baja California Sur, where chefs and restaurants are increasingly drawing inspiration from the region itself. Local seafood, seasonal produce and regional ingredients contribute to dining experiences that feel connected to the destination.

The result is a food scene that complements the many reasons travelers visit La Paz, Baja California Sur. A day exploring the coastline, discovering marine life or enjoying an outdoor adventure can end with a meal that reflects the same landscape and local character.

For travelers, the growing culinary profile of La Paz offers another reason to look beyond traditional beach destinations in Mexico and discover a destination where nature, adventure and gastronomy come together in a distinctly Baja California Sur experience.
