The world’s leading chocolate and pastry event arrives in Toronto this fall, uniting acclaimed pastry chefs, chocolatiers and cocoa producers from more than 10 cocoa-producing countries for four days of tastings, culinary craftsmanship, live demonstrations and a decadent journey from bean to bar.

TORONTO, Sept. 23, 2026 (GLOBE NEWSWIRE) — Salon du Chocolat et de la Pâtisserie is coming to Toronto from November 19-22, transforming the Toronto Congress Centre into an immersive experience under the theme From Paris to Toronto: World of Wonders. The Toronto edition will showcase world-renowned pastry chefs and chocolatiers through live demonstrations, tastings, edible art and chocolate haute couture, while providing industry professionals a dedicated forum to share best practices, forge partnerships and explore business opportunities.

François Daubinet: Pastry in Pursuit of Excellence

Among the international talent coming to Toronto is French pastry chef François Daubinet, Creative Director and Ambassador for Maison Valrhona, a world reference in fine chocolate. Working at the intersection of pastry, chocolate, design and luxury, Daubinet views every creation as both a sensory experience and an act of storytelling. His participation will take place in two parts: a professional masterclass for chefs and industry professionals, and a public-facing experience that gives guests access to the world of a chef of international renown.

A Program Worth Melting For

The event will welcome more than 10 cocoa-producing countries, offering guests the opportunity to travel the world one bite at a time.

  • Chocolate Fashion Show: The Salon’s signature Parisian experience pairs Seneca Polytechnic fashion design alumni with chefs and chocolatiers to create wearable works of chocolate couture.
  • Chocol’Art: Monumental chocolate sculptures, holiday log cakes, interactive exhibits and edible art almost too beautiful to eat.
  • Pastry’Cho: Renowned pastry chefs and chocolatiers take the stage for live demonstrations and exclusive tastings, opening doors to their craft for all to experience.
  • Chef Workshops: Hands-on, small-group sessions with pastry chefs and chocolatiers, giving guests the opportunity to learn techniques to create seasonal creations and holiday showstoppers.
  • Cacao Show: Panels and conversations with cocoa producers, chocolatiers and industry experts sharing their journeys, expertise and perspectives on chocolate in all its forms.
  • Expo Village & International Delegations: Sample, discover and shop offerings from chocolatiers, pastry makers, artisans and producers from around the world. Meet delegations from Colombia, Peru, Ecuador, Côte d’Ivoire and beyond, while exploring sustainability and equity issues shaping the future of cacao.
  • Bean-to-Bar Museum: Follow chocolate from cocoa tree to finished creation, discovering the craftsmanship behind every bite.
  • Business Space: A dedicated B2B platform connecting buyers, suppliers, distributors and culinary professionals around innovation, sustainability, traceability and business opportunities. Programming includes a financing clinic and a masterclass led by an international chef.
  • Salon du Chocolat Junior: Family programming designed to spark curiosity and reveal tomorrow’s talent through interactive activities, recipes, painting and hands-on chocolate discovery.
  • Cake Time: An elevated Parisian-inspired afternoon tea, reimagined by Chef Christian Campos, celebrating the precision, artistry and indulgence in the great tradition of the finest pastry houses.

The Toronto edition welcomes three major international pavilions representing cocoa-producing regions:

  • Peruvian Pavilion: Presented by PROMPERÚ, the Trade commission of Peru in Toronto, featuring Peruvian cooperatives producing a high-quality bean-to-bar chocolate.
  • Latin American Pavilion: Presented by the Institute of Innovation and Advanced Learning (IIAL); bringing together cooperatives from Costa Rica, Mexico and Guatemala.
  • African Pavilion; Presented by Pavilion Afrique, featuring cooperatives from Côte d’Ivoire and West Africa showcasing cacao and single-origin chocolate.

Competition: Celebrating the Next Generation

Salon du Chocolat Toronto places the next generation at the heart of its programming through a pastry and chocolate competition that brings together four of Ontario’s leading culinary schools. Designed to inspire emerging talent, encourage excellence and celebrate the art of pastry and chocolate, the competition will feature bold creations judged by a panel of acclaimed chefs.
